Your partner joins with a code and never pays anything. Most apps charge each of you separately. This one doesn't.

No. One subscription covers the pair. Whichever of you subscribes unlocks it for both, and the other joins with a six-character code.
In your own iCloud account, synced through Apple. We can't read it. Our server holds only what it needs to run: invite codes for fifteen minutes, your subscription record, and anonymous counts like "a task was created".
Only if you switch on "share my busy times", and only to work out when you're both free. It publishes time ranges and nothing else. Titles, locations and guests never leave your phone, and turning it off deletes them straight away.
Settings has "Export my data" and "Leave space". You take a copy of everything with you. If you created the space, you can delete it outright.
Yes, fourteen days for new subscribers. It starts when you subscribe, and you can cancel any time before it ends in your Apple Account settings. The calendar and Today stay free either way.
Yes. The space is yours from the first second. Add what you like and invite them whenever you're ready. Nothing is lost in the meantime.
